Paws & Claws: Esma Edition


I have three cats, and this is the story of my second cat, and the only one we have raised from a kitten. I'm starting with her as her rescue anniversary was just a few days ago, she's been with us five years.

It was a late summer night, if I remember right, it was hot. I was outside, and I felt something behind me a few feet away, all I saw when I turned around was a white racoon tail. The next day I told my husband Mike about what I saw the previous night. Throughout the day we kept hearing these little cries from outside. We ended up finding her next to the shed, we backed off as she was scared. We trapped her later that day (with a cage, and tuna), and brought her inside. Where Mike was able to pick her up, and give her a bath. She was half feral, and very small. She was around 8 weeks old, she fit in the palm of your hand.

She was the only one, and alone. We knew the first time we saw her that we were going to keep her. She's a Siamese with unusual colored paws. A cross between a flame and a lilac point. We figured that she was the runt of the bunch and that with her different colored paws that a breeder didn't want her and dropped her off in our neighborhood, which is not unheard of. That made sense to us.



Here is Esma, on her first night with us. Don't worry the cage door is completely open.

No matter how she came to us, we love her just the same. We named her Esmeralda, though she wasn't responding to it. It was too long, so we called her Esma.

All cats are insane, and each has their own quirks. Siamese tend to bond to one person, and that person was Mike, even five years later, she still sleeps on his hip, or his leg, just like she did when she was a kitten. She cries out in the middle of the day if she wakes up and she's alone. We say hello, and she comes running. Usually with her little-stuffed raccoon in her mouth. She is just the sweetest thing. She is still small, half the size of my other cats, but her personality is anything but little.

Picnic Recipes: Cool Veggie Pizza



Here's a great summer recipe! This cool pizza rocks!


What you'll need:

1 pkg (8 oz/250 g) refrigerated crescent rolls
1 pkg (8 oz/250 g) cream cheese, softened
1 tbsp (15 mL) mayonnaise
1 garlic clove, pressed
1 tsp (5 mL) dried dill weed
Salt and ground black pepper to taste
2 C (500 mL) assorted fresh vegetables such as broccoli, cauliflower, cucumber, green or red bell pepper, tomato, green onions, mushrooms, carrot, zucchini, or yellow summer squash




Directions:

Preheat the oven to 350°F (176°C) . Unroll the crescent dough and separate it into eight triangles. On the round stone or pizza pan, arrange the dough triangles in a circle with points in the center and wide ends toward the outside. Using a lightly floured roller roll the dough into a 12" (30-cm) circle, pressing the seams together to seal. Bake for 12-15 minutes or until the dough is light golden brown. Remove from the pan from the oven and let the dough cool completely.


In a bowl, combine the cream cheese, mayonnaise, garlic and dill weed. Season the mixture with salt and black pepper; mix well. Spread the cream cheese mixture evenly over the cooled crust.


To prepare the vegetables, coarsely chop the broccoli or cauliflower. Dice or slice the cucumber, bell pepper, green onions, yellow squash, or zucchini, or tomato. Slice the mushrooms and grate the carrot.


Sprinkle the vegetables over the prepared crust. Cut the pizza and serve!

Drink Mix Friday: Strawberry Vodka Slush Cocktail



Strawberry Vodka Slush Cocktail
I found this drink in my Facebook feed last and had to try it!


Ingredients

1 pint strawberries, hulled & sliced
2 cups ice cubes
1/2 cup vodka
1/4 cup triple sec
3 Tablespoons Simple Syrup
1/2 cup lemon lime soda or to taste
Whole strawberries and mint leaves optional garnish


Instructions

add all ingredients into your blend and blend thoroughly.
Serve in chilled glasses with a mint leave and a strawberry for garnish

Pinic Recipes: Potato Salad




Everyone loves potato salad!!!


Ingredients:


5 pounds red potatoes, chopped
3 cups mayonnaise
5 hard-cooked eggs, chopped
1/2 cup chopped red onion
1/2 cup chopped celery
3 tablespoons prepared mustard
1 tablespoon apple cider vinegar
1 teaspoon salt


Preparation:
  1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until barely tender, about 10 minutes. Drain. Rinse potatoes with cold water to cool completely; drain.
  2. Stir mayonnaise, eggs, red onion, celery, mustard, vinegar, salt, and pepper together in a large bowl. Fold potatoes into the mayonnaise mixture.

Quick & Easy Chicken Fajitas.



 



I'm going to share with you my Quick & Easy Chicken  Fajitas. Makes a great dinner on a hot summer day!


What you'll need:
1 medium green bell pepper and 1 medium yellow (or red) pepper
(optional one sweet onion) Cut into strips
4 boneless, skinless chicken breast cooked and cut into strips (or you can by the ones already made and cut)
1/2 cup of water
1/2 cup of salsa
1 envelope of Lipton Onion Soup Mix
1 teaspoons of vegetable oil
12 (7-8 inch) flour tortillas warmed

Preparation:
In a large skillet place peppers, (onions) chicken, salsa, and soup mix. Stir about 5 minutes until everything is mixed and heated.
Place mixture in tortillas, roll, and serve.
I always place sour cream and shredded cheese on the table along with rice to complete my meal.

I serve this with a side of Spanish Rice!

Drink Mix Friday: Bailey's Milkshake




This is a great adult shake!

   Bailey's Milkshake



1 cup vanilla ice cream
1/4 cup chocolate syrup
3/4 cup milk
One shot (or two) of Bailey's Irish cream 




Pour all ingredients into a blender and puree for several seconds, or until smooth. Pour into a glass and serve immediately.

Picnic Recipes: Frozen Yogurt Pie



This may not be an easy one to bring to a picnic but its a great dessert on a hot summer day!

Frozen Yogurt Pie

Fruity low-fat yogurt and whipped topping are blended, spooned into a graham cracker crust and frozen for a refreshingly easy no-bake pie. 

Makes 8 servings.
What you need:
1 tub (8 oz.) Cool Whipped Topping, thawed
4 containers (6 oz. each) low-fat yogurt
1 graham pie crust
Optional: 1 & 1/4 cups fresh fruit
Add whipped topping to yogurt in medium bowl; stir with wire whisk until well blended. Spoon into crust.
Freeze 4 hours or until firm. Remove from freezer 10 minutes before serving; let stand at room temperature to soften slightly.
Optional: Top with fresh fruit just before serving. Store leftovers in freezer.

Drink Mix Fridays: Kahlua Milkshakes


  Today I bring a favorite of mine:  Kahlua Milkshake





Ingredients

1-2 ounces Kahlua
3-4 scoops vanilla ice cream
1/2 cup milk or cream
whipped cream for garnish

Instructions
Place Kahlua, ice cream and milk in a blender. Blend until completely mixed. pour into glass. Top with whipped cream and a tablespoon of Kahlua if desired.

You can also add chocolate syrup and vodka!
